Chicken Pot Pie
Ladies and Gentlemen
My wife has made this several times. Highly recommended.
Crust
1 1/4 cup flour
1/2 tsp Oregano
1/2 tsp Basil
1/2 tsp Thyme
1/2 tsp salt
1/4 tsp Pepper
1/3 cup Shortening(Chilled)
2 tbsp Butter
2-4 tbsp Ice Water
Combine flour and spices. Cut is shortening and butter, until mixture resembels coarse meal. Sprinkle with ice water and toss with fork until mixture comes together. Shape into ball and flatten slightly. Wrap in plastic wrap and refrigerate one hour.
For Filling
1 medium sized potato - cubed
2 medium sized carrots - sliced
2 cups cooked diced chicken
1 cup peas
2 tbsp butter
1 medium sized onion, chopped
Garlic
1/2 tsp Basil
1/2 cup flour
2 cups chicken broth
1/4 cup Dry white wine
3/4 tsp pepper
1/2 tsp salt
Bring 1 1/2 quart water to boil, add potato and carrots. Boil 2 minutes and drain, combine with chcicken. Saute onion in butter till soft. Add spices and saute one minute sprinkle flour on top and blend. Whick in broth and wine, salt, and pepper. Cook, stirring until thinckened and bubbly. Add to chicken mixture and put in 2 qt. Casserole.
Roll out crust to fit top of casserole, leaving a 1" overhang. Trim and crimp. Cut several vents in top.
Bake at 400 degrees till crust is brown and filling is bubbly(about 40-50 minutes).
Let stand for 10 minutes before serving.
We have also tried this without the crust and used biscuits instead. Also, if there are other vegetables you would like to try, I am sure it can be done.
